Ingredients
1 lb ground beef (85/15 lean)
1 medium onion, finely chopped
2 cloves garlic, minced
10 oz red enchilada sauce
4 oz canned green chilies
1 tsp ground cumin
1 tsp chili powder
0.5 tsp paprika
Salt and black pepper to taste
10-12 corn tortillas
2 cups shredded cheddar or Monterey Jack cheese
Instructions
Preheat your oven to 375°F and spread a thin layer of sauce in a 9×13 baking dish.
Cook the ground beef in a large skillet over medium heat until browned, about 5-7 minutes.
Drain the excess fat thoroughly from the skillet.
Add the onion and garlic to the meat, cooking for 3-4 minutes until softened.
Stir in the cumin, chili powder, paprika, green chilies, salt, and pepper, heating for 2-3 minutes.
Mix in 1/2 cup of the enchilada sauce into the meat mixture to bind it.
Heat the corn tortillas in a dry skillet or microwave until pliable to prevent cracking.
Spoon the meat filling into each tortilla, roll tightly, and place seam-side down in the prepared dish.
Top with the remaining sauce and the shredded cheese.
Bake for 20 minutes until the cheese is melted and bubbly.
Notes
Always warm your corn tortillas before rolling; this is the secret to preventing them from splitting or becoming mushy. You can use a mix of Monterey Jack and Cheddar for the best melt and flavor. Store leftovers in an airtight container for up to 3 days.
