Description

This indulgent creamy pepperoncini chicken is a masterclass in slow-cooked comfort. Featuring tender, succulent chicken breast bathed in a velvety sauce infused with zesty pepperoncini juice, ranch seasoning, and rich dairy, this dish offers a perfect balance of savory notes and mild heat. It is a reliable, high-reward crowd-pleaser that is perfect for busy weeknights, delivering professional, restaurant-quality results with minimal effort.

Ingredients

2 pounds boneless, skinless chicken breast
1 ounce ranch seasoning packet
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
4 tablespoons unsalted butter
1/2 cup low sodium chicken broth
1/4 cup pepperoncini juice
8 to 10 whole pepperoncini peppers
8 ounces cream cheese, softened
1/2 cup heavy cream
1/2 cup freshly grated parmesan cheese
1 tablespoon fresh chopped parsley

Instructions

Place the chicken breasts into the base of a 6-quart slow cooker.
Sprinkle the ranch seasoning, garlic powder, onion powder, and black pepper evenly over the chicken.
Top the chicken with the butter, chicken broth, pepperoncini juice, and whole pepperoncini peppers.
Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender and pulls apart easily.
Remove the chicken from the slow cooker and shred it using two forks.
In a separate bowl, whisk together the softened cream cheese, heavy cream, and grated parmesan cheese until smooth.
Stir the dairy mixture into the slow cooker juices until well incorporated.
Return the shredded chicken to the slow cooker and stir to coat thoroughly in the sauce.
Continue to heat for another 20 to 30 minutes until the sauce is thickened and glossy.
Garnish with fresh parsley before serving.

Notes

For best results, do not add the dairy at the beginning to avoid curdling. Whisking the cream cheese and heavy cream at the end ensures a smooth, professional sauce texture. Serve over pasta, rice, or with crusty bread.
