Ingredients

1 lb ground 90% lean beef
1 packet taco seasoning
2 cups cooked white or brown rice
2 cups nacho cheese Doritos, lightly crushed
1 cup shredded iceberg lettuce
1 cup diced Roma tomatoes
1 cup shredded cheddar or Mexican blend cheese
0.5 cup sour cream or Greek yogurt
0.5 cup mild or hot salsa


Instructions

Heat a large heavy-bottomed skillet over medium heat.
Brown the ground beef thoroughly until no pink remains, breaking it into small crumbles.
Drain the excess rendered fat from the skillet.
Stir in the taco seasoning and the water as directed on the seasoning packet.
Simmer for 5 minutes until the sauce slightly thickens and coats the beef.
Divide the cooked rice into four serving bowls.
Top each bowl with the seasoned ground beef.
Layer with shredded lettuce, diced tomatoes, and shredded cheese.
Add a dollop of sour cream and a spoonful of salsa.
Top with the crushed Doritos immediately before serving to maintain the crunch.

Notes

Ensure you crush the Doritos only right before serving so they do not get soggy. For extra protein, you can add black beans or corn. Use Greek yogurt instead of sour cream to reduce calories.
