Ingredients

6 bell peppers
3/4 cup uncooked brown or white rice
1 pound ground beef
3/4 cup yellow onion, finely diced
3 cloves garlic, minced
15 oz can diced tomatoes, slightly drained
3/4 cup tomato sauce
2 teaspoons Italian seasoning
1 cup mozzarella cheese


Instructions

Preheat your oven to 400 degrees Fahrenheit.
Cook the rice according to package directions and set aside to cool.
Cut the tops off each bell pepper and remove all seeds and internal membranes.
In a large skillet, cook the ground beef over medium-high heat until browned.
Add the diced onion and garlic to the skillet, sautéing until softened.
Stir in the cooked rice, diced tomatoes, tomato sauce, and Italian seasoning until well combined.
Stuff each pepper generously with the beef and rice mixture.
Place the filled peppers in a baking dish and cover with foil.
Bake for 35 minutes until the peppers are tender.
Remove the foil, sprinkle with mozzarella cheese, and bake for an additional 5 minutes until the cheese is melted and bubbly.

Notes

You can substitute ground beef with ground turkey for a leaner profile. Use any color of bell pepper for varying levels of sweetness. If you prefer a sharper taste, swap the mozzarella for cheddar cheese.
