Description
Healthy spinach avocado breakfast quesadilla packed with protein and flavor.
Ingredients
4 large eggs
4 egg whites
6 tbsp water
1/4 tsp salt
1/2 tsp pepper
4 whole wheat tortillas
1/2 cup grated cheddar cheese
Hot sauce to taste
3/4 avocado, sliced
2/3 cup fresh spinach
Instructions
1. Whisk eggs and egg whites.
2. Scramble eggs until just set.
3. Assemble tortillas with filling.
4. Cook quesadillas until golden.
5. Slice and serve.
Notes
Cook eggs gently.
Add spinach raw so it wilts naturally.
