Description
Smoky Cowboy Soup is a hearty, creamy comfort soup made with ground beef, potatoes, beans, corn, smoky spices, and melted cheese. A perfect cold-weather dinner.
Ingredients
1 lb ground beef or turkey
1 tablespoon olive oil (if needed)
1 small onion, diced
2 garlic cloves, minced
3 medium potatoes, peeled and diced
1 can (15 oz) corn, drained
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) pinto beans, rinsed and drained
1 can (14.5 oz) diced tomatoes with green chilies
1 can (10 oz) Rotel tomatoes
4 cups beef or chicken broth
1 teaspoon chili powder
1 teaspoon smoked paprika
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon black pepper
1 cup heavy cream or half-and-half
1 cup shredded cheddar cheese
2 tablespoons cream cheese (optional)
Fresh cilantro or parsley, for garnish
Instructions
1. Brown ground beef in a large pot and drain excess fat.
2. Add onion and garlic and cook until fragrant.
3. Stir in potatoes and seasonings.
4. Add broth, tomatoes, beans, and corn and bring to a boil.
5. Simmer 20 minutes until potatoes are tender.
6. Stir in cream, cheddar, and cream cheese until melted.
7. Adjust seasoning and serve hot with garnish.
Notes
Ground turkey may be substituted.
Soup thickens as it cools.
Leftovers reheat well.
