Description
Slow Cooker Creamy Tomato Basil Chicken made with tender chicken breasts simmered in a rich tomato basil cream sauce. An easy crockpot dinner perfect for busy weeknights.
Ingredients
1 (14 oz) can diced tomatoes with Italian herbs
1 cup marinara sauce
3 cloves garlic, minced
1 tsp salt
1 tsp Italian seasoning
½ tsp dried basil
¼ tsp black pepper
½ cup heavy whipping cream
2 Tbsp cornstarch
4 boneless skinless chicken breasts
2 Tbsp chopped fresh basil
Grated Parmesan for serving
Instructions
1. Add tomatoes, sauce, garlic, and seasonings to slow cooker.
2. Whisk cream and cornstarch and stir in.
3. Add chicken and press into sauce.
4. Cook on low 3-4 hours until chicken reaches 165°F.
5. Stir in fresh basil and serve with Parmesan.
Notes
Check chicken temperature for doneness.
Great served over pasta or rice.
