Ingredients
2 large sweet potatoes, cubed
1 large yellow onion, wedged
2.5 tbsp extra virgin olive oil
3/4 tsp garlic powder
3/4 tsp chipotle powder
1 lb boneless skinless chicken breasts
2/3 cup alcohol-free BBQ sauce
1 head broccoli, cut into florets
Salt to taste
Instructions
Preheat your oven to 400°F (200°C).
Dice sweet potatoes into 1/2-inch cubes and slice onion into wedges.
Toss potatoes and onions on a large baking sheet with olive oil, salt, garlic powder, and chipotle powder.
Roast for 20 minutes.
Remove the sheet from the oven and push vegetables to the sides; add chicken breasts and broccoli florets to the center.
Brush the chicken generously with BBQ sauce.
Return to the oven for 20 minutes or until chicken reaches an internal temperature of 165°F.
Remove from oven, shred the chicken using two forks, toss with remaining pan juices, and distribute into bowls.
Notes
Ensure chicken is trimmed well before cooking. If using broccoli, add it in the final 15 minutes of roasting to prevent burning. Substitute butternut squash for sweet potato if preferred. Use fresh minced garlic only if adding at the very end, as it tends to burn at 400°F.
