Ingredients

1 lb tilapia fillets
3 tbsp unsalted butter
1 medium onion, finely diced
2 cloves garlic, minced
6 oz roasted peppers, chopped
6 oz roasted peppers, pureed
0.75 cup heavy cream
0.5 cup parmesan cheese, freshly grated
Salt and cracked black pepper to taste
Fresh parsley for garnish


Instructions

Melt two tablespoons of butter in a large non-stick skillet over medium heat.
Place tilapia fillets in the skillet and cook for three to four minutes per side until opaque and flaky.
Remove fish from the pan, season with salt and pepper, and keep warm.
Add remaining tablespoon of butter to the skillet, then sauté the diced onion and garlic until softened.
Stir in the chopped and pureed roasted peppers, simmering for two minutes.
Pour in the heavy cream and bring to a gentle simmer.
Whisk in the parmesan cheese until the sauce is smooth and thickened.
Return the fish to the pan for one minute to coat with sauce.
Garnish with fresh parsley and serve immediately.

Notes

Use a mix of yellow and red roasted peppers for a deeper color variation. If you prefer a lighter sauce, substitute heavy cream with half-and-half. Ensure the tilapia is patted dry with paper towels before searing to achieve a better golden crust.
