Description

The Pear & Gorgonzola Chicken Bake delivers a sophisticated combination of savory poultry, creamy blue cheese, and sweet orchard fruit. This one-skillet meal balances complex flavors with a simple cooking process perfect for weeknight dinners. By searing the chicken first, we lock in moisture, while the tangy Gorgonzola and caramelized pears create a restaurant-quality sauce that feels truly indulgent. Finished with toasted walnuts for crunch, this dish offers a perfect harmony of textures and flavors in every bite.

Ingredients

4 chicken breasts, pounded to 3/4 inch thickness
1 small shallot, minced finely
1/2 cup chicken broth (low-sodium)
1/2 cup heavy cream
4 oz Gorgonzola Dolce, crumbled
2 firm-ripe pears (Bosc or Anjou), sliced
1/2 cup walnut halves, toasted
1 tbsp olive oil
1 tbsp butter
Salt and black pepper to taste

Instructions

Preheat your oven to 400°F (200°C).
Season chicken breasts generously with salt and pepper on both sides.
Heat olive oil and butter in an oven-safe skillet over medium-high heat.
Sear chicken for three minutes per side until golden-brown, then remove and set aside.
Add minced shallot to the skillet and sauté for one minute until translucent.
Pour in chicken broth to deglaze the pan, scraping up all browned bits.
Stir in heavy cream and crumbled Gorgonzola, simmering until the sauce thickens slightly.
Return the chicken to the skillet and arrange sliced pears around the meat.
Transfer the skillet to the preheated oven and bake for 10-12 minutes until chicken is cooked through.
Top with toasted walnuts before serving.

Notes

Use Bosc or Anjou pears as they hold their shape best when baked. If you prefer a sharper flavor, substitute Gorgonzola Dolce with regular Gorgonzola. Ensure walnuts are toasted properly for the best texture contrast.
