Creamy Parmesan tomato tortellini soup made with cheese tortellini, sun-dried tomatoes, and a rich tomato base. A cozy, comforting dinner perfect for cold days.
Ingredients
9 oz frozen cheese tortellini
2 (10.75 oz) cans tomato soup
2 cups chicken broth
2 cups milk
2 cups half and half
½ cup chopped sun-dried tomatoes
1 tsp onion powder
1 tsp garlic powder
1 tsp dried basil
½ tsp salt
½ cup shredded Parmesan cheese
Instructions
1. Cook tortellini according to package directions.
2. Combine soups, liquids, seasonings, and tomatoes in pot.
3. Heat gently without boiling.
4. Add tortellini and stir.
5. Stir in Parmesan until melted.
6. Serve hot.
Notes
Do not boil after adding dairy.
Add milk when reheating if needed.
Great for leftovers.
