Description
Crispy, golden-brown Parmesan mashed potato cakes with a soft, fluffy interior. These savory patties use a double application of Parmesan cheese for structural integrity and umami-rich crunch. A vegetarian main course or side dish made with pantry staples and fresh herbs.
Ingredients
2 large potatoes (approx 1 lb), peeled and cooked
1 large egg
1.5 cups grated Parmesan cheese
0.25 cup fresh parsley, chopped
0.25 cup fresh chives, chopped
0.25 cup all-purpose flour
0.5 tsp salt
0.5 tsp black pepper
3 tbsp olive oil, for frying
Instructions
Boil water in a large pot, add potatoes and cook until fork-tender
Drain and let cool completely
Mash cooled potatoes with egg, 1 cup Parmesan, parsley, chives, flour, salt, and pepper
Form mixture into 4 evenly sized patties
Press remaining 0.5 cup Parmesan onto the bottom of each patty
Heat olive oil in a skillet over medium heat
Cook patties, flipping once, until golden brown and crispy (~4-5 minutes per side)
Repeat with remaining mixture, adding more oil if necessary
Serve warm as a side or with a dipping sauce of choice
Notes
Use Russet or Yukon Gold potatoes for optimal fluffiness
Adjust salt to offset Parmesan’s inherent saltiness
Substitute chives with scallions if unavailable
Fry in batches to avoid overcrowding the pan and ensure proper browning
