Description

One Pot Queso Chicken and Rice made with seasoned chicken, fluffy rice, and a creamy queso-style sauce. A fast, family-friendly dinner with minimal cleanup.


Ingredients

1 lb boneless skinless chicken breast, diced

1 tbsp extra-virgin olive oil

1 tsp garlic powder

½ tsp onion powder

½ tsp cumin

½ tsp kosher salt

½ tsp black pepper

2¼ cups chicken broth

1 (15 oz) can nacho cheese sauce

1 (10 oz) can Rotel tomatoes

1½ cups uncooked long-grain white rice


Instructions

1. Season and cook chicken in olive oil until fully cooked.

2. Stir in broth, cheese sauce, and Rotel and bring to a boil.

3. Add uncooked rice and stir to combine.

4. Cover and simmer until rice is tender.

5. Rest briefly and serve.

Notes

Drain excess liquid after cooking chicken if needed.

Add a splash of broth when reheating.
