Description
This one pot gnocchi chicken pot pie is creamy, cozy, and packed with tender chicken, vegetables, and pillowy gnocchi. A comforting dinner ready in under 30 minutes.
Ingredients
4 tablespoons butter or vegan butter
1 cup sliced carrots
4 oz mushrooms, sliced
1–2 celery ribs, thinly sliced
1 large shallot or small onion, chopped
Seasoned salt and pepper, to taste
2 cloves garlic, minced
1 teaspoon poultry seasoning
Pinch dried thyme
3 tablespoons flour (gluten free or all-purpose)
2 cups chicken broth
1 cup milk (any kind)
12 oz gnocchi
1 1/2 cups cooked shredded chicken
1/2 cup frozen peas
Instructions
1. Melt butter in a large pot over medium-high heat.
2. Add carrots, mushrooms, celery, and onion and sauté until tender.
3. Season and add garlic, poultry seasoning, and thyme.
4. Sprinkle flour over vegetables and cook briefly.
5. Slowly stir in broth and milk and bring to a simmer.
6. Add gnocchi and cook until tender.
7. Stir in chicken and peas.
8. Adjust seasoning and serve hot.
Notes
Stir frequently after adding gnocchi.
Use rotisserie chicken to save time.
Add broth if sauce becomes too thick.
