Description

One Pot Creamy Vegetable Soup made with fresh vegetables, herbs, cream, and cheddar cheese for a cozy vegetarian dinner.


Ingredients

6 tablespoons butter

1 white onion, diced

1.5 cups chopped carrots

1.5 cups chopped celery

6 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon dried sage

1/3 cup flour

6 cups vegetable broth

3 cups diced potatoes

2 cups chopped broccoli

1 can corn, drained

1/2 cup heavy cream

4 oz sharp cheddar cheese

1 teaspoon balsamic vinegar

Salt and pepper to taste


Instructions

1. Sauté vegetables in butter.

2. Add garlic and herbs.

3. Stir in flour.

4. Add broth and vegetables.

5. Simmer until tender.

6. Stir in cream and cheese.

7. Season and serve.

Swap veggies as desired.
