Description
One-Pan Honey BBQ Chicken and Rice is a quick and flavorful dinner made with tender chicken, fluffy rice, and a sweet smoky honey BBQ sauce, all cooked in one pan for easy cleanup.
Ingredients
4 boneless, skinless chicken thighs or breasts
1 cup long-grain white rice
2 cups chicken broth
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup honey
1/2 cup barbecue sauce
Fresh parsley for garnish
Instructions
1. Mix honey and barbecue sauce in a bowl and set aside.
2. Heat olive oil in a skillet and season chicken with paprika, salt, and pepper.
3. Sear chicken 3 to 4 minutes per side until golden, then remove.
4. Sauté onion and garlic until soft.
5. Add rice and cook for 1 minute.
6. Pour in broth, return chicken, and add sauce.
7. Cover and simmer 18 to 20 minutes until rice and chicken are cooked.
8. Let rest 5 minutes, garnish with parsley, and serve.
Notes
Use chicken thighs for juicier results.
Do not lift lid while rice cooks.
Add extra broth when reheating.
Adjust sweetness by modifying honey amount.
