A quick and budget-friendly one pan cheesy smoked sausage and pasta recipe made with tender pasta, smoky sausage, and a creamy Cheddar-Jack cheese sauce.
Ingredients
1 tbsp olive oil
1 lb smoked sausage, sliced
1/2 cup diced onion
1 tbsp minced garlic
2 cups chicken broth
1 can diced tomatoes (14 oz)
1/2 cup milk
8 oz dry pasta
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
2 cups shredded Cheddar-Jack cheese
1/3 cup chopped scallions
Instructions
1. Heat olive oil in a large pan over medium heat.
2. Add sausage and onion and cook until lightly browned.
3. Stir in garlic and seasonings and cook briefly.
4. Add broth, tomatoes, milk, and pasta and bring to a boil.
5. Reduce heat, cover, and simmer until pasta is tender.
6. Remove from heat and stir in cheese until melted.
7. Garnish with scallions and serve.
Notes
Use short pasta for best texture.
Add milk when reheating to keep pasta creamy.
Great for leftovers and meal prep.
