Description

Crack the code on perfect Fourth of July desserts with these mini fruit pizzas! Crispy buttery shortbread crusts topped with light cream cheese mousse and vibrant red, white, and blue berries offer a refreshing handheld treat for summer celebrations.

Ingredients

Butter, 1/4 cup, unsalted, softened
Granulated sugar, 3/4 cup
Large egg, 1 unit, room temperature
Salt, 1/8 tsp
Cream of tartar, 1 tsp
Baking soda, 1/2 tsp
All-purpose flour, 1 1/3 cups
Heavy whipping cream, 1 cup, cold
Cream cheese, 8 oz, full-fat, room temperature
Powdered sugar, 3/4 cup, sifted
Mixed berries, 2 cups, fresh (strawberries, blueberries, raspberries) with optional lemon zest for brightness

Instructions

Preheat oven to 350°F (175°C). In medium bowl, cream butter and sugar until fluffy. Add egg, salt, cream of tartar, and baking soda, mixing until smooth. Gradually fold in flour until dough forms. Divide dough into 12 equal portions. Shape each into discs, chill for 15 minutes. Place on parchment-lined baking sheets, flatten slightly with palm, then cut 5 notches into each for star shapes. Bake 12-15 minutes until golden. Let cool completely.
In large bowl, beat cream cheese and sifted powdered sugar until smooth. In separate bowl, whip cold whipping cream until stiff peaks form. Gently fold 1/3 cream into cheese mixture, then carefully transfer to a piping bag. Pipe frosting onto cooled cookies. Arrange berries in patriotic color patterns, dust with additional powdered sugar if desired.

Notes

Chilling the dough maintains shape during baking
Assemble up to 12 hours ahead, store in fridge
Use freeze-dried berries for non-pilling toppings
Allergies: Contains dairy and egg
Substitute maple syrup for half the sugar for a halal-friendly option
