Ingredients
1 lb Ground Beef (80/20 ratio)
1/2 cup Yellow onion, finely diced
1 cup Green bell pepper, diced small
2 cups Potatoes (Russet or Yukon Gold), peeled and diced
4 cloves Garlic, minced
8 oz Tomato sauce (unseasoned)
1 1/2 cups Beef broth (low sodium)
1 tsp Salt
1 tsp Cumin
1 tsp Coriander
1 Bay leaf
Instructions
Heat a large skillet over medium heat and brown the ground beef, breaking it into small pieces.
Drain excess grease from the skillet.
Add diced onions, green bell peppers, and potatoes to the skillet and sauté until slightly softened.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Pour in the tomato sauce and beef broth.
Add salt, cumin, coriander, and the bay leaf.

Remove the bay leaf before serving.
