Ingredients
1 lb Ground Beef (85/15 or 90/10)
1 tsp Olive oil
1 small Onion, chopped
2 cloves Garlic, minced
1 tsp Ground cumin
1 tsp Smoked paprika
Salt and pepper to taste
4 Pita pockets
1 cup Lettuce, shredded
1 medium Tomato, diced
1/2 cup Cucumber, diced
1/2 cup Feta cheese, crumbled
1/4 cup Tzatziki sauce
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and minced garlic, sautéing until soft and translucent.
Add the ground beef, cumin, paprika, salt, and pepper to the skillet.
Cook for 8-10 minutes, stirring occasionally, until the beef is thoroughly browned.
Warm the pita pockets slightly in an oven or microwave if desired, then carefully cut them in half to create pockets.
Stuff each pita pocket with the cooked ground beef mixture.
Top with shredded lettuce, diced tomato, diced cucumber, crumbled feta cheese, and a generous dollop of tzatziki sauce.
Notes
You can prep the vegetable mixture ahead of time to make assembly at mealtime even faster. For a lower-carb option, serve the beef mixture over a large bed of greens as a Mediterranean bowl instead of using pita bread.
