Ingredients
1 pound large shrimp, peeled and deveined
1 bunch asparagus, trimmed
4 cloves garlic, minced fresh
2 tablespoons olive oil (extra virginial preferred)
1 tablespoon butter, optional
¼ teaspoon red pepper flakes, optional
Instructions
Rinse shrimp under cold water and pat dry
Season shrimp with salt and black pepper
Trim asparagus by snapping off woody ends and cutting into 2-inch pieces
Heat 1 tbsp olive oil in a skillet over medium
Sauté garlic 1-2 minutes until fragrant
Increase heat to medium-high, cook shrimp 2-3 minutes per side until opaque
Add 2nd tbsp olive oil and asparagus, stir frequently for 3-4 minutes
Return shrimp to pan, add lemon juice, zest, and butter
Toss gently and cook 1-2 more minutes to meld flavors
