Ingredients
1 box (15.25 oz) lemon cake mix
2 large eggs
1/2 cup (1 stick) butter, softened
1/3 cup powdered sugar
1 to 2 tablespoons fresh lemon juice
Zest of 1 lemon
Instructions
1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with foil, leaving overhang for easy removal, and spray with non-stick cooking spray.
2. In a large bowl, combine the lemon cake mix, eggs, and softened butter. Mix until a thick, sticky dough forms.
3. Press the dough evenly into the prepared pan using a spatula or your hands.
4. Bake for 15 to 20 minutes, until the edges are lightly golden and the center is set.
5. Remove from the oven and allow the bars to cool completely in the pan.
6. Lift the bars out using the foil overhang and transfer to a cutting surface.
7. Cut into 15 to 20 squares, depending on your preferred size.
8. In a small bowl, whisk together powdered sugar and lemon juice until smooth to form the glaze.
9. Drizzle the glaze evenly over the bars and sprinkle with fresh lemon zest.
10. Let the glaze set slightly before serving.
Notes
Do not overbake to keep the bars soft and chewy.
Use freshly squeezed lemon juice for the best flavor.
Adjust glaze thickness by adding more powdered sugar or lemon juice.
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
Freeze unglazed bars for longer storage and add glaze after thawing.
