Ingredients

1.5 lbs boneless, skinless chicken thighs
6-7 large Yukon gold potatoes, thinly sliced
1 cup high-quality honey BBQ sauce
2 tablespoons unsalted butter
6 cloves fresh garlic, minced
2 cups whole milk
1.5 cups fresh grated parmesan cheese
0.5 cup mozzarella cheese, shredded
2 tablespoons flour
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
2 tablespoons olive oil
Salt and pepper to taste


Instructions

Preheat your oven to 375°F (190°C).
Season the chicken thighs with paprika, onion powder, garlic powder, salt, and pepper, then drizzle with olive oil and let rest for 10 minutes.
Melt butter in a saucepan, add garlic and cook for 60 seconds, then whisk in flour to make a roux.
Gradually whisk in the milk and bring to a simmer until thickened, then stir in 1 cup of parmesan.
Arrange sliced potatoes in a baking dish, pour the garlic cream sauce over them, and top with the seasoned chicken.
Cover with foil and bake for 40 minutes.
Remove foil, brush chicken with honey BBQ sauce, sprinkle with remaining cheese, and bake uncovered for another 20 minutes until golden and caramelized.

Notes

Use a mandoline slicer for consistent potato thickness so they cook evenly throughout the casserole. If the chicken skin is not browning enough at the end, set the oven to broil for the final 2-3 minutes while watching closely to prevent burning.
