Ingredients
Chickpea Pasta, 12 oz
Extra Virgin Olive Oil, 1/2 cup
Fresh Garlic, 5 cloves
Basil Paste, 1/2 tbsp
Cherry Tomatoes, 10 oz
Mozzarella Cheese, 8 oz
Red Pepper Flakes, 1-2 tsp
Instructions
Bring a pot of salted water to a boil. Cook pasta according to package instructions, then drain and set aside.
Heat 1/4 cup olive oil in a skillet over medium heat. Sauté garlic for 30 seconds until fragrant.
Add cherry tomatoes to the skillet, roasting and blistering them for 5-7 minutes until softened.
Stir in remaining 1/4 cup olive oil, basil paste, and red pepper flakes. Simmer for 2 minutes.
Toss cooked pasta into the skillet mixture. Fold in cubed mozzarella until just melted and glossy.
Season with salt and pepper, then serve immediately.
