Ingredients
1 lb lean ground beef (90-93 percent lean)
4 medium Russet potatoes, sliced 1/8 inch thin
1 cup plain non-fat Greek yogurt
1/2 cup light sour cream
1 cup low-sodium beef broth
3/4 cup reduced-fat shredded sharp cheddar
1 medium onion, chopped
2 cloves garlic, minced
1 tsp paprika
1 tsp dried oregano
1 tbsp olive oil
1 tbsp cornstarch
Salt and black pepper to taste
Instructions
Preheat your oven to 375 degrees Fahrenheit and grease a 9 by 13-inch baking dish.
Heat the olive oil in a large skillet over medium heat.
Sauté the chopped onion until softened, then add the minced garlic for 30 seconds.
Brown the lean ground beef thoroughly, breaking it into small crumbles, then drain excess fat.
Season the beef with paprika, oregano, salt, and black pepper.
In a small bowl, whisk together the Greek yogurt, light sour cream, beef broth, and cornstarch until smooth.
Arrange half of the sliced potatoes in the bottom of the prepared baking dish.
Spread half of the cooked beef over the potatoes.
Pour half of the yogurt sauce mixture over the beef layer.
Repeat the layers with the remaining potatoes, beef, and yogurt sauce.
Cover the dish with foil and bake for 45 minutes.
Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake for an additional 20 minutes until the potatoes are tender and the cheese is bubbly.
Notes
Ensure potatoes are sliced consistently at 1/8 inch to ensure even cooking.
Let the bake rest for 5-10 minutes after removing from the oven for easier serving.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
