Description
These Healthy Blueberry Oatmeal Bars are made with hearty oats, juicy blueberries, and a crumbly topping. Perfect as a wholesome snack, breakfast bar, or light dessert.
Ingredients
1 cup old-fashioned oats
3/4 cup all-purpose flour (or gluten-free blend)
1/3 cup light brown sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon (optional)
6 tablespoons unsalted butter, melted (or coconut oil)
1 teaspoon vanilla extract
For the filling:
1 cup blueberries (fresh or frozen)
1/4 cup granulated sugar
2 teaspoons cornstarch
Instructions
1. Preheat oven to 375°F (190°C) and line an 8-inch baking pan with parchment paper.
2. In a bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon.
3. Add melted butter and vanilla extract; mix until crumbly.
4. Press half of the mixture into the pan to form the base.
5. Mix blueberries with sugar and cornstarch, then spread over the base.
6. Crumble remaining oat mixture on top and gently press.
7. Bake for 35–40 minutes until golden and bubbly.
8. Cool completely before slicing into bars.
Notes
Use fresh or frozen blueberries.
Allow bars to cool fully before cutting.
Store in airtight container up to 5 days.
Great for meal prep and freezing.
