Healthy banana oatmeal meal prep bars made with oats, ripe bananas, and natural sweeteners. Perfect for quick breakfasts, snacks, and freezer-friendly meal prep.
Ingredients
2 cups rolled oats
1 1/3 cup mashed banana
6 tbsp water
1/2 tsp salt
3 tbsp maple syrup or honey
3 tbsp oil or nut butter
1 tsp vanilla extract
Optional: chocolate chips, nuts, or seeds
Instructions
1. Preheat oven to 350°F and prepare an 8-inch pan.
2. Mix oats, banana, water, salt, sweetener, oil, and vanilla.
3. Fold in optional add-ins.
4. Spread mixture evenly into pan.
5. Bake for 20 minutes.
6. Turn off oven and let sit inside for 5 minutes.
7. Cool completely and slice into bars.
Notes
Use ripe bananas for best sweetness.
Store in fridge or freezer for meal prep.
