Description

This Hawaiian chicken sheet pan dinner features tender chicken pieces roasted with bell peppers, red onion, and sweet pineapple, all glazed with a savory tropical sauce. Ideal for a quick weeknight meal that’s packed with flavor and nutrition.


Ingredients

1 ½ lbs chicken breasts, cut into 1-inch pieces
1 red bell pepper, chopped into large squares
1 yellow bell pepper, chopped into large squares
1 small red onion, cut into sturdy wedges
1 ½ cups fresh or canned pineapple chunks (canned juice reserved, if applicable)
2 tablespoons olive oil
Low-sodium soy sauce
1 tablespoon honey
1 teaspoon fresh ginger, minced
1 clove garlic, minced
1 tablespoon cornstarch
Water, as needed for cornstarch slurry
Orange bell pepper, optional (as alternative to yellow or red)


Instructions

Preheat oven to 400°F (200°C)
In a large bowl, toss chicken pieces, bell peppers, onion, and pineapple with olive oil and a pinch of salt and pepper
Spread the mixture evenly on a large sheet pan ensuring the ingredients aren’t overlapping
Roast for 20-22 minutes, or until the chicken is cooked through and the veggies are caramelized and slightly charred
In the last 5 minutes of roasting, prepare the glaze
In a small saucepan, mix soy sauce, honey, ginger, garlic, and 2 tablespoons of pineapple juice (or water)
Bring the sauce to a simmer and add a cornstarch slurry made with 1 tablespoon cornstarch and 2 tablespoons water
Cook until the sauce thickens and becomes glossy, about 2-3 minutes
Remove the sheet pan from the oven and pour the glaze over the chicken and vegetables, tossing lightly to coat
Return to oven for 5 minutes to allow the glaze to caramelize slightly
Remove and serve immediately

Notes

Chicken thighs can be used for extra moisture if preferred
Reserve the pineapple juice from canned pineapple to enhance the glaze flavor
Ensure the vegetables are cut evenly for consistent cooking on the sheet pan
Use a rimmed sheet pan to prevent glaze from spilling during roasting
