Ingredients
1 Tablespoon peanut oil
3 cups broccoli florets
1 lb ground beef (85/15 lean)
1 medium yellow onion, diced finely
1 red bell pepper, sliced into thin strips
2 Tablespoons cornstarch
2 Tablespoons cold water
1 cup low sodium beef broth
1/4 cup soy sauce
3 tablespoons brown sugar
1-2 tablespoons honey
2 cloves garlic, minced
1/2 teaspoon ground ginger
1 teaspoon toasted sesame oil
Instructions
Combine cornstarch and cold water in a small container and shake until smooth.
Whisk together beef broth, soy sauce, brown sugar, honey, garlic, and ginger in a bowl.
Heat peanut oil in a wok or large skillet over high heat.
Sauté the broccoli florets until tender-crisp, then remove from the pan and set aside.
Add the ground beef and diced onion to the hot skillet, cooking until the beef is browned and onions are softened.
Add the sliced red bell pepper to the beef and cook for 2 minutes.
Pour the sauce mixture into the skillet and bring to a simmer.
Stir in the cornstarch slurry and cook until the sauce thickens.
Return the cooked broccoli to the pan and toss everything together.
Finish with a drizzle of toasted sesame oil before serving.
Notes
Use tamari instead of soy sauce for a gluten-free version. Feel free to swap peanut oil for vegetable or olive oil if preferred. For an extra kick, add red pepper flakes during the sauce preparation.
