Ingredients
1 cup mayonnaise
2 tablespoons chipotle in adobo sauce, chopped
1 tablespoon lime juice
Salt and pepper to taste
1 pound chicken breasts or tenders
2 teaspoons olive oil
2 teaspoons garlic powder
1 teaspoon onion powder
2 teaspoons smoked paprika
1 teaspoon oregano
2 tablespoons lime juice
3 cloves garlic, minced
4 large tortillas
2 cups shredded lettuce
1 cup diced tomatoes
1/2 cup diced red onion
2 cups shredded cheddar and pepper jack cheese
Instructions
1. Mix mayonnaise, chipotle peppers, lime juice, salt, and pepper to make chipotle sauce. Refrigerate.
2. Slice chicken into thin cutlets and season with oil, spices, lime juice, and garlic.
3. Cook chicken on grill or skillet for 3 to 4 minutes per side until fully cooked.
4. Let chicken rest, then cut into bite-sized pieces.
5. Lay tortillas flat and add lettuce, tomatoes, onion, cheese, and chicken.
6. Drizzle chipotle sauce over filling.
7. Fold sides and roll tightly into wraps.
8. Serve immediately.
