Ingredients
2 boneless, skinless chicken breasts
1 teaspoon Italian seasoning
1 pound asparagus, trimmed
Olive oil, as needed
Salt and black pepper, to taste
12 ounces rotini pasta
1/3 cup pesto
Juice of 1/2 lemon
1/4 cup shredded Pecorino Romano or Parmesan cheese
2 tablespoons toasted pine nuts
Fresh chopped basil for garnish
Instructions
1. Cook pasta according to package instructions, then drain and place in a large bowl.
2. Preheat grill to medium-high heat.
3. Season chicken with Italian seasoning, salt, and pepper.
4. Drizzle asparagus with olive oil, salt, and pepper.
5. Grill chicken for 4 to 6 minutes per side until fully cooked, then let rest and slice.
6. Grill asparagus for 2 to 3 minutes until tender and slightly charred, then cut into pieces.
7. Add chicken and asparagus to the pasta.
8. Stir in pesto, lemon juice, and cheese, tossing until evenly coated.
9. Season with salt and pepper to taste.
10. Garnish with pine nuts and fresh basil before serving.
Notes
Use fresh pesto for best flavor.
Do not overcook asparagus to keep it crisp.
This dish can be served warm or cold.
Store leftovers in the refrigerator up to 4 days.
