Description
This Greek Orzo Pasta Salad is fresh, vibrant, and packed with Mediterranean flavors. Made with orzo, feta, olives, tomatoes, and a zesty lemon vinaigrette, it’s perfect for meal prep, lunch, or a light dinner.
Ingredients
1/3 cup extra virgin olive oil
3 tbsp red wine vinegar
1 small bunch parsley, chopped
1 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
150g baby plum tomatoes, halved
100g feta cheese, cubed
100g kalamata olives, halved
3 tbsp red onion, diced
1 garlic clove, minced
300g orzo pasta
75g green pepper, diced
75g cucumber, sliced
Juice of 1/2 lemon
Instructions
1. Whisk olive oil, vinegar, parsley, oregano, salt, and pepper.
2. Add tomatoes, feta, olives, onion, and garlic. Marinate for 1 hour.
3. Cook orzo until al dente, then cool completely.
4. Add orzo to the bowl and mix well.
5. Stir in pepper and cucumber.
6. Add lemon juice and adjust seasoning.
7. Serve chilled or at room temperature.
Notes
Let ingredients marinate for best flavor.
Use fresh lemon juice.
Add protein like chicken or chickpeas if desired.
Store in fridge up to 4 days.
