Description

This nutritious Mediterranean-inspired bowl brings together savory spiced ground beef and cooling homemade tzatziki sauce. It is a perfect high-protein meal that balances hearty flavors with crisp vegetables and fresh herbs. Designed for efficiency, these bowls come together in under thirty minutes, making them a fantastic choice for busy weeknight dinners or healthy meal prep throughout the work week.

Ingredients

1 lb ground beef (80/20 fat ratio)
1 cup plain Greek yogurt
1/2 English cucumber, grated
2 cups cooked rice or quinoa
1/2 cup crumbled feta cheese
1 small onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp dried oregano
1/2 tsp smoked paprika
1/2 tsp ground cumin
1 tbsp fresh dill, chopped
1 tbsp lemon juice
Salt and black pepper to taste

Instructions

In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and fresh dill.
Stir the tzatziki sauce until smooth and season with salt and pepper; refrigerate until needed.
Heat olive oil in a large skillet over medium heat.
Sauté the onion until translucent and soft, about 3 minutes.
Add minced garlic and cook for 30 seconds until fragrant.
Add the ground beef, breaking it into crumbles with a wooden spoon.
Add oregano, smoked paprika, cumin, salt, and pepper to the beef.
Cook the beef for 8-10 minutes until fully browned.
Assemble the bowls by layering the cooked rice, seasoned beef, and a generous dollop of cold tzatziki.
Top with crumbled feta cheese and serve.

Notes

Substitute rice with cauliflower rice for a low-carb alternative. Ensure the cucumber is squeezed of excess liquid before adding to the yogurt for a thicker sauce. Leftovers store well in the refrigerator for up to 3 days in airtight containers.
