Ingredients
1 lb ground beef (80/20 fat ratio)
1 cup plain Greek yogurt
1/2 English cucumber, grated
2 cups cooked rice or quinoa
1/2 cup crumbled feta cheese
1 small onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp dried oregano
1/2 tsp smoked paprika
1/2 tsp ground cumin
1 tbsp fresh dill, chopped
1 tbsp lemon juice
Salt and black pepper to taste
Instructions
In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and fresh dill.
Stir the tzatziki sauce until smooth and season with salt and pepper; refrigerate until needed.
Heat olive oil in a large skillet over medium heat.
Sauté the onion until translucent and soft, about 3 minutes.
Add minced garlic and cook for 30 seconds until fragrant.
