A rich, creamy one-pot meal combining caramelized onions, tender shredded chicken, and cheesy orzo. This French-inspired casserole offers a silky texture and deep flavors, perfect for a family-friendly dinner with minimal cleanup.
Ingredients
Unsalted Butter, 2 tablespoons
Olive Oil, 1 tablespoon
Yellow Onions, 2 large (thinly sliced)
Sugar, 1 teaspoon
Salt, ½ teaspoon
Garlic Cloves, 3 (minced)
Orzo Pasta, 1 ½ cups (dry)
Shredded Chicken, 2 cups (rotisserie or poached)
Dried Thyme, 1 teaspoon
Low-Sodium Chicken Broth, 4 cups
Heavy Cream, 1 cup
Freshly Grated Mozzarella Cheese, 1 cup
Parmesan Cheese, ½ cup (plus extra for topping)
Black Pepper, to taste
Instructions
Heat butter and olive oil in a large pot over medium. Add onions, sugar, and salt; cook 20-25 minutes until golden and caramelized.
Add garlic and orzo; toast for 2-3 minutes until fragrant.
Pour in chicken broth, bring to a simmer. Cook 10-12 minutes, stirring occasionally, until orzo is tender.
Stir in shredded chicken, thyme, and black pepper. Cook 5 minutes to heat through.
Reduce heat, add heavy cream, mozzarella, and ½ cup Parmesan. Simmer 5-7 minutes until creamy and thickened.
Serve topped with additional Parmesan and a drizzle of balsamic glaze (optional).
Notes
Use ghee instead of butter for a higher smoke point.
Sweet Vidalia onions can replace yellow onions.
Rotisserie chicken saves time and adds rich flavor.
