Ingredients

8 oz Lo Mein noodles (or spaghetti)
2 tbsp Vegetable oil, divided
1 lb Chicken thighs, thinly sliced
3 cloves Garlic, minced
1.5 cups Broccoli florets
0.5 cup Carrots, julienned
2 stalks Green onions, chopped
0.25 cup Low-sodium soy sauce
2 tbsp Vegetarian mushroom oyster sauce
1 tbsp Hoisin sauce
2 tsp Cornstarch
1 tsp Sesame oil
0.5 tsp Sugar
0.25 cup Water


Instructions

Cook the noodles according to package instructions until al dente; drain and set aside.
In a small bowl, whisk together soy sauce, mushroom sauce, hoisin, cornstarch, sugar, and water.
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat and brown the chicken slices; remove from pan.
Add the remaining oil to the pan and stir-fry broccoli, carrots, and garlic for 3-4 minutes until tender-crisp.
Return the chicken to the pan and add the cooked noodles.
Pour the sauce mixture over the ingredients and toss constantly until the sauce thickens and coats everything evenly.
Stir in the green onions and sesame oil, then serve immediately.

Notes

Substitute chicken breasts for thighs if a lower-fat option is preferred. Ensure vegetables are sliced thinly for uniform cooking times. Serve immediately to keep the sauce at its ideal glossy consistency.
