Description

Epic Teriyaki Chicken Skewers made with juicy marinated chicken grilled to perfection and glazed in a rich, homemade teriyaki sauce. Sweet, savory, and perfect for BBQs, weeknight dinners, or meal prep.


Ingredients

2 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch cubes

2 tablespoons cornstarch

1 cup water

1/3 cup brown sugar

1/3 cup low-sodium soy sauce

2 cloves garlic, minced

1 tablespoon rice vinegar

1/2 tablespoon fresh ginger, minced

1 tablespoon honey

1/2 teaspoon sesame oil

8 skewers (wooden or metal)

Sesame seeds (optional garnish)

Chopped green onions (optional garnish)


Instructions

1. In a small bowl, whisk together the cornstarch and water until smooth.

2. In a medium saucepan, combine brown sugar, soy sauce, garlic, rice vinegar, ginger, honey, and sesame oil.

3. Add the cornstarch mixture to the saucepan and cook over medium heat, stirring frequently until the sauce thickens and becomes glossy.

4. Remove from heat and allow the sauce to cool completely. Place in the refrigerator to speed up cooling if needed.

5. Place the cubed chicken in a large zip-top bag or bowl and pour half of the cooled sauce over it. Toss to coat evenly.

6. Cover and marinate the chicken in the refrigerator for at least 30 minutes (up to 8 hours for deeper flavor).

7. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

8. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.

9. Preheat your grill to medium heat and lightly oil the grates.

10. Place skewers on the grill and cook for 20–30 minutes, turning every 3–4 minutes for even cooking.

11. During the last few minutes of cooking, baste the skewers with the reserved teriyaki sauce to create a caramelized glaze.

12. Ensure chicken reaches an internal temperature of 165°F, then remove from grill.

13. Garnish with sesame seeds and chopped green onions, and serve immediately.

Notes

Chicken thighs are recommended for juicier, more flavorful skewers.

Do not skip cooling the sauce before marinating to prevent partially cooking the chicken.

Baste only during the final minutes to avoid burning due to sugar in the sauce.

These skewers can also be baked at 400°F for 20–25 minutes or cooked in an air fryer.

Serve with rice, noodles, or grilled vegetables for a complete meal.

Store leftovers in the refrigerator for up to 4 days.
