Description

Fun and easy Pizza Cupcakes made with soft pizza dough, rich sauce, gooey mozzarella cheese, and classic toppings. These mini pizza muffins are perfect for parties, snacks, picnics, or quick meals.


Ingredients

Cooking spray

8 medium cherry tomatoes, finely chopped and drained

1 (11 ounce) refrigerated pizza crust

16 teaspoons shredded mozzarella cheese (divided)

8 tablespoons pizza sauce

8 teaspoons finely chopped red onion

8 slices pepperoni, quartered

1/4 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes

1/4 teaspoon garlic salt


Instructions

1. Preheat the oven to 400°F (200°C) and grease 8 cups of a muffin tin with cooking spray.

2. Finely chop the cherry tomatoes and drain any excess liquid to prevent sogginess.

3. Unroll the pizza dough onto a lightly floured surface and roll it into a thin rectangle.

4. Use a 4-inch round cutter to cut out 8 circles of dough.

5. Press each dough circle into the prepared muffin cups, forming a cup shape along the bottom and sides.

6. Add 1 teaspoon of mozzarella cheese into each cup.

7. Spoon 1 tablespoon of pizza sauce into each cup over the cheese.

8. Top with chopped tomatoes and red onion.

9. Add another portion of mozzarella cheese on top.

10. Place quartered pepperoni pieces on each cup.

11. Sprinkle Italian seasoning, red pepper flakes, and garlic salt evenly over the tops.

12. Bake for 14 to 15 minutes, or until the cheese is melted and bubbly and the edges are golden.

13. Remove from the oven and allow to cool in the pan for about 5 minutes.

14. Carefully remove from the muffin tin and serve warm.

Notes

Drain tomatoes well to avoid excess moisture in the cupcakes.

Do not overfill the cups to keep their shape intact.

You can customize toppings with sausage, mushrooms, olives, or bell peppers.

For extra flavor, brush the dough edges with garlic butter before baking.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
