Ingredients
Chicken Breasts (2 large, boneless skinless, ~1.5 lbs)
Honey (2 tablespoons)
Lime Juice and Zest (2 limes)
Olive Oil (2 tablespoons)
Garlic (2 cloves, minced)
Ground Cumin (1 teaspoon)
Smoked Paprika (1/2 teaspoon)
Fresh Mango (1 large ripe, diced)
Red Onion (1/4 cup, chopped)
Jalapeño (1 small, seeded and finely diced)
Fresh Cilantro (handful, chopped)
Salt and Pepper (to taste)
Instructions
Combine chicken, lime juice, zest, 1 tbsp honey, 1 tbsp olive oil, garlic, cumin, paprika, salt, and pepper in a bowl; let marinate 30-45 minutes.
Heat remaining oil in a skillet over medium-high heat. Cook chicken 6-8 minutes per side until golden and fully cooked (internal temp 165°F).
Meanwhile, prepare salsa: mix mango, onion (rinse and drain), jalapeño, remaining lime juice, 1 tsp honey, cilantro, and ice (if desired). Chill until ready to serve
Let chicken rest 5 minutes before slicing. Serve warm chicken with chilled salsa over or alongside.
Notes
Fresh lime juice is essential for flavor depth; avoid bottled. Use Ataulfo or Tommy Atkins mangoes for the best texture. For extra moisture, substitute chicken thighs
Marinating longer (up to 1 hour) improves tenderness. Salsa can be prepared 2 hours ahead
