Ingredients

Extra lean ground beef
Chopped onion
Jalapeño
Garlic clove
Taco seasoning
Ro-tel tomatoes
Chicken broth
Cauliflower rice
Cheddar cheese


Instructions

Heat skillet over medium heat and brown ground beef with onion, jalapeño, and garlic
Add taco seasoning and cook for 2 minutes
Stir in Ro-tel tomatoes and chicken broth
Add cauliflower rice and simmer for 10 minutes
Sprinkle cheddar cheese over the top and cook uncovered until cheese melts and rice firms
