Description

These Easy Chicken Burrito Bowls are loaded with juicy marinated chicken, cilantro lime rice, black beans, corn, and fresh toppings. A healthy and customizable meal perfect for busy weeknights or meal prep.


Ingredients

3 tbsp fresh lime juice

3 tbsp olive oil (divided)

1 tbsp chili powder

2 tsp ground cumin

1 1/2 tsp minced garlic

Salt and black pepper to taste

1 3/4 lbs boneless skinless chicken thighs

1 batch cilantro lime rice

2 ears fresh corn (kernels removed)

1 1/2 cans black beans (undrained)

1 cup shredded cheddar cheese

2 roma tomatoes, chopped

2 medium avocados, chopped

6 tbsp chopped red onion

1/2 cup sour cream or Mexican crema

Hot sauce (optional)


Instructions

1. In a bowl, mix lime juice, 2 tbsp olive oil, chili powder, cumin, garlic, salt, and pepper.

2. Add chicken and marinate for at least 1 hour in the refrigerator.

3. Heat a skillet and cook chicken for 6 minutes per side until internal temperature reaches 165°F.

4. Let chicken rest, then slice into strips.

5. Warm black beans in a saucepan over medium-low heat.

6. Cook corn in a skillet with oil for 3–4 minutes until slightly charred.

7. Prepare cilantro lime rice.

8. Assemble bowls with rice, chicken, beans, corn, cheese, tomatoes, avocado, and onion.

9. Top with sour cream and hot sauce, then serve.

Notes

Marinate chicken longer for deeper flavor.

Use fresh lime juice for best taste.

Store ingredients separately for meal prep.
