Ingredients
2 cups shredded cooked chicken
1 cup shredded cheddar or Mexican blend cheese
1/2 cup black beans, rinsed and drained
1/4 cup finely chopped green onions
1 teaspoon taco seasoning
12 corn tortillas
Instructions
Preheat oven to 425°F (220°C)
In a large bowl, combine shredded chicken, cheese, black beans, green onions, and taco seasoning. Mix well
Warm corn tortillas in a dry skillet over medium heat for about 10 seconds per side
Place a generous spoonful of the chicken mixture near the bottom edge of each tortilla
Fold the bottom up, then roll the tortilla tightly from the bottom to enclose the filling
Place seam-side down on a baking sheet lined with parchment paper
Bake for 20 minutes, or until golden and crispy
Notes
Use leftover rotisserie chicken for convenience
