Ingredients

1 lb boneless skinless chicken breast, cut into bite-sized pieces
1/2 cup shallots, minced
1/3 cup sun-dried tomatoes, drained and chopped
2.5 cups low-sodium chicken broth
2 oz cream cheese, room temperature
8 oz fusilli or penne pasta
1 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt and black pepper to taste
Optional: red pepper flakes


Instructions

Heat one tablespoon of olive oil in a large deep skillet over medium-high heat.
Season chicken with salt, pepper, Italian seasoning, and garlic powder.
Sauté chicken for 6-8 minutes until golden and cooked through, then set aside.
In the same skillet, add shallots, sun-dried tomatoes, and garlic.
Sauté for 2 minutes until fragrant.
Pour in chicken broth and scrape the bottom of the pan to release browned bits.
Add the pasta to the broth and simmer until liquid is mostly absorbed and pasta is al dente.
Stir in the softened cream cheese until smooth and creamy.
Return the cooked chicken to the pan and toss to combine and warm through.

Notes

Ensure cream cheese is at room temperature to prevent clumping. You can substitute red onion if shallots are unavailable. Use low-sodium chicken broth to better control the final saltiness of the dish.
