Description
Experience a restaurant-quality meal at home with this succulent, creamy pot-roasted chicken. By utilizing a Dutch oven, the chicken stays incredibly moist while the potatoes soak up the aromatic notes of lemon, fresh herbs, and a velvety cream sauce. This one-pot technique ensures an easy cleanup, delivering perfectly tender meat and rich, savory juices without the need for manual basting. It is the ultimate comforting meal for family gatherings, combining crispy skin with a luxurious, herb-infused finish.
Ingredients
4 pounds whole chicken
1 large lemon
1.5 pounds baby potatoes, halved
2 cups heavy cream
1 cup low sodium chicken broth
Fresh rosemary sprigs
Fresh oregano
Fresh tarragon
Salt and black pepper to taste
Smoked paprika
Garlic powder
Garlic cloves, peeled
Butter for roasting
Instructions
Preheat your oven to 425F.
Pierce the lemon and insert it into the chicken cavity.
Season the chicken generously with salt, pepper, smoked paprika, and garlic powder.
Place the chicken in a Dutch oven with rosemary sprigs, peeled garlic cloves, and butter pats.
Pour the chicken broth into the bottom of the pot.
Cover and roast for 45 minutes.
Remove the lid, add the baby potatoes, cream, oregano, and tarragon.
Continue roasting until the potatoes are tender and the chicken is fully cooked.
Notes
Ensure the chicken giblets are removed before roasting. Use full-fat heavy cream to achieve the best texture for the sauce. You can brown the chicken skin in a pan with a little oil before putting it in the Dutch oven if you prefer an extra crispy crust.
