Easy Creamy Chicken Poblano Soup with black beans, shredded chicken, corn, and a rich cheesy broth. Perfect small-batch cozy meal.
Ingredients
1 tbsp butter or olive oil
1/2 cup chopped yellow onion
1 poblano pepper, chopped
2 cups shredded chicken
1 can (15 oz) black beans, drained
1/2 cup frozen corn
3 cups chicken broth
1/2 cup heavy cream
1/2 cup shredded cheese
2 tsp fresh lime juice
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cumin
Fresh cilantro for garnish
Instructions
1. Cook onions and poblano in butter.
2. Add chicken, beans, corn, broth, and seasoning.
3. Simmer 15 minutes.
4. Stir in cream and cheese.
5. Simmer 15 more minutes.
6. Finish with lime juice and garnish.
Notes
Adjust spice level to taste.
Use rotisserie chicken for convenience.
