Description
A quick and easy creamy beet pasta made with blended cooked beets, cottage cheese, parmesan, and garlic. This vibrant pink pasta is ready in about 15 minutes.
Ingredients
1 lb pasta
2 Tbsp extra virgin olive oil
3 garlic cloves, sliced
6–8 oz cooked beets
1 cup cottage cheese
2/3 cup grated parmesan cheese
3/4 tsp kosher salt
1/4 tsp black pepper
Parsley for garnish
Instructions
1. Cook pasta and reserve water.
2. Toast garlic in olive oil.
3. Blend beets, cheese, garlic, and seasonings.
4. Toss sauce with pasta.
5. Adjust consistency and serve.
Notes
Roasted beets give best color.
Use pasta water to thin sauce.
Serve immediately for best texture.
