Description

Crispy, deep-fried funnel cakes with a golden, airy web texture. Made with a smooth batter poured through a funnel into hot oil, these fried treats capture the essence of a summer county fair. Perfect with a dusting of powdered sugar or a rich caramel dip.

Ingredients

Large Eggs 2 Units
Whole Milk 1 Cup
Water 1 Cup
Alcohol-Free Vanilla Extract 1 Teaspoon
All-Purpose Flour 3 Cups
Granulated Sugar 1/4 Cup
Baking Powder 3 Teaspoons
Salt 1/2 Teaspoon

Instructions

In a large mixing bowl, whisk together eggs, milk, water, and alcohol-free vanilla extract until smoothly blended.
Sift flour, sugar, baking powder, and salt into the liquid mixture. Stir until just combined, ensuring the batter is thin and pourable.
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Pour the batter through a funnel into the hot oil, forming spiral lattices using a squeeze bottle or piping bag.
Fry in small batches for 10–15 seconds, or until deep golden and puffed up. Transfer to a parchment paper-lined tray to drain briefly.
Serve immediately with a light dusting of sugar or preferred toppings like caramel or fruit preserves.

Notes

For a dairy-free version, substitute whole milk with oat milk or soy milk.
Use a squeeze bottle or piping bag for precise shaping and intricate lattice patterns.
Maintain oil temperature closely to prevent greasiness and ensure even browning.
If batter thickens too much, add a splash of warm water or milk to restore流动性.
