Description

A zesty, citrus-infused marinade blending lime juice, cilantro, and chili for tender, deeply flavored chicken. Perfect for grilling with a smoky-sweet balance and vibrant herbs.


Ingredients

1-1.5 lb chicken breasts (boneless, skinless)
½ cup fresh cilantro (loosely packed)
3 cloves fresh garlic
3 Tbsp freshly squeezed lime juice
¼ cup olive oil
½ tsp chipotle powder
½ tsp ground cumin
¼ tsp salt
¼ tsp black pepper
2 Tbsp honey


Instructions

Blend cilantro, garlic, lime juice, olive oil, chipotle powder, cumin, salt, and pepper in a food processor until smooth
Marinate chicken for 30-60 minutes in a sealed container
Thread onto skewers (optional) and grill over medium-high heat for 5-7 minutes per side until golden and juices run clear
Brush with honey during last 2 minutes of cooking for caramelized glaze

Notes

For richer flavor, marinate overnight in refrigerator
Substitute smoked paprika for milder heat
Add 1 tsp cornstarch mixed with 2 tbsp water during last few minutes of cooking for glossy finish
Use chicken thighs for juier results
Marinade can be stored in fridge for up to 2 days
