Ingredients

1.5 lbs boneless skinless chicken breast
2 tbsp olive oil
1 tsp salt
1.25 tsp garlic powder
1.25 tsp cumin
1 tsp brown sugar
1 tsp dried oregano
1.5 tsp chili powder
3 tsp paprika
1 tbsp tapioca starch
3 bell peppers, sliced
0.5 large red onion, sliced
2 cups cooked cilantro lime rice
1 cup cooked black beans


Instructions

Pound the chicken breasts to an even thickness of about one-half inch for uniform cooking.
Combine the salt, garlic powder, cumin, brown sugar, oregano, chili powder, paprika, and tapioca starch in a small bowl.
Coat the chicken thoroughly with the seasoning mixture, pressing it into the surface.
Heat one tablespoon of olive oil in a large skillet over medium-high heat.
Sear the chicken for 5-7 minutes per side until golden brown and cooked through, then remove and set aside to rest.
Add the remaining tablespoon of oil to the same skillet.
Sauté the bell peppers and red onion until crisp-tender, about 5-8 minutes.
Slice the chicken into strips.
Assemble the bowls by layering the cilantro lime rice and black beans, followed by the sautéed vegetables and seared chicken.

Notes

Store in airtight containers in the refrigerator for up to 4 days. Use avocado oil if you prefer a higher smoke point for searing. Fresh minced garlic can be used instead of powder for a more pungent flavor.
