Ingredients

1 pound chicken breast, diced into uniform cubes
2 cups cabbage, chopped finely
1 medium onion, sliced thinly
2 cloves garlic, minced finely
1 tbsp butter (or cooking oil)
1 bell pepper, sliced into strips
1 carrot, julienned
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
Black pepper to taste
Salt to taste
Red pepper flakes to taste


Instructions

Whisk 1 tbsp soy sauce, 1 tsp sesame oil, and black pepper in a bowl to create the marinade.
Add chicken cubes to the marinade and let rest for 15 minutes.
Combine remaining soy sauce, oyster sauce, salt, and red pepper flakes in a small bowl to prepare the sauce.
Heat butter or oil in a wok or large skillet over high heat.
Add marinated chicken and sear until browned and cooked through.
Remove chicken from pan and set aside.
In the same pan, stir-fry the onion, garlic, bell pepper, and carrot until fragrant and slightly softened.
Add the cabbage to the pan and cook for 2-3 minutes until just tender-crisp.
Return the chicken to the pan and pour in the prepared sauce.
Stir-fry everything together for another minute until heated through and well-coated.

Notes

Ensure you do not overcook the cabbage to maintain its signature crunch. For a thicker sauce that clings to the vegetables, whisk in half a teaspoon of cornstarch to your sauce mixture before adding it to the pan. If you prefer a dairy-free meal, simply substitute the butter with a neutral cooking oil like vegetable or canola.
