Description

Cheesy One Pot Beef and Potatoes is a hearty skillet dinner made with tender sliced potatoes, seasoned ground beef, peppers, and melted cheddar cheese. An easy one pan meal perfect for busy weeknights.


Ingredients

1 tablespoon olive oil

1 tablespoon unsalted butter

1.8 pounds starchy potatoes, peeled and thinly sliced

2 Romano peppers, sliced (or bell peppers)

1.1 pounds lean ground beef

1 yellow onion, finely chopped

2 garlic cloves, minced

1 teaspoon sweet paprika

1 teaspoon black pepper

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon chili flakes

2 tablespoons double concentrated tomato paste

2 tablespoons chopped parsley, plus more for serving

2 cups chicken broth

1½ cups grated cheddar cheese


Instructions

1. Prep all ingredients before cooking by slicing potatoes, chopping vegetables, and mincing garlic.

2. Heat olive oil and butter in a large nonstick skillet over medium-high heat.

3. Add potatoes and cook about 6 minutes until golden on all sides. Remove and set aside.

4. Add peppers to the skillet and cook 3 minutes until softened.

5. Add ground beef and cook 2 minutes, breaking it up, until lightly browned.

6. Add onion and garlic and cook 2 minutes until fragrant.

7. Season with salt, pepper, paprika, Italian seasoning, and chili flakes.

8. Stir in tomato paste until well combined.

9. Return potatoes and parsley to the skillet and stir gently.

10. Pour in chicken broth, cover, and cook 10 minutes until potatoes are tender.

11. Uncover and simmer until most of the liquid evaporates.

12. Sprinkle cheddar over the top, cover, and let melt completely.

13. Garnish with parsley and chili flakes and serve hot.

Notes

Use starchy potatoes for the best texture.

Slice potatoes evenly so they cook at the same rate.

Adjust chili flakes to control spice level.

Leftovers reheat well in a skillet or microwave.

Serve with a side salad for a complete meal.
